I was wondering if it is possible to replace the HDD in my tekken 7 with an SSD , the loading time is appaling for a start, so anything to speed it up would be nice, then there is the warning i always here , dont fuck with ES3 , as it tends to brick ?

Yes, boot and loading time are really better with SSD.
The problem is hardware & software are locked together. You can create a 1:1 disk image, it won't boot because of disk not being the same.
