No, those are the original ones. Regarding arcade stuff, I try to keep everything original if I can ;)

Most likely he used heat to remove the sticker. Something like a heat gun or his hot air station would do the trick.
Yes. Just a little heat (the lowest setting of the heat gun) softens the glue. I mean just a little heat and practice. To make sure you are not applying too much heat, put your finger in the target of the heat gun, close to the sticker :) If your finger burns then you know you are applying too much heat ;)

And after that I use a blunt xacto knife for these kind of things...

Use it veeeery slowly. The trick is to keep the edge of the knife parallel to the surface. If you hold it up, it'll cut the sticker. Think as if there is no sticker there and you are just trying to scrape the chip surface not the sticker.

And of course, a little whiskey will help keep your hands steady ;) :D :D :D
