Not my own project, but have you heard about Fred and Barry's DIY kit to turn CRT tubes to XY vector monitor sets ?
These are produced by around 30 units batches, and they sell pretty fast.
Meanwhile Vectrex spares could work on these setups allowing colors
I have ordered one because I really dig this era, I love my Vectrex and I can't imagine how exciting would be playing games with color and goo quality at 20"crt.
I don't have much experience in XY arcade, but someday I can see coming some support to allow mame or multis run on XY setups, it would be very exciting, any interest on this in the forum ?
