I've got the Jamma to Scart from Smallcab and it works very well I must say. But you have to add Audio yourself.
Added Attenuation circuit to bring down Sound to a safe level.

I Use an Aver Media internal Capture Card.

You seem to be having the same issue I had with it, which is very dark video.
It is very easy to setup, and works for me, but the feed gets quite dark when just splicing the signal with a parallel SCART connector like this.

edit: Also, I think I increased the resistor on sync to 470ohm on it, since I believe the original resistor was quite small and I was a bit worried about my OSSC. Doesn't impact brightness or anything, and works fine.
 
TBH I don't mind the darker Image. Just go ez mode on this too and experiment with Brightness/contrast filters in your Stremaing Software?
OBS Studio has this option at least, don't know other Programms.
 
Are you using OSSC? in the menu settings there's an option for Pre-ADC gain or something like that. I usually bump mine up to about 6 or 7 and it makes the video not look dark.

The jamma2scart allows the regular video signal to go to the arcade monitor or the SCART takes over and replaces it?
