just curious about that adapter, R-Type is already JAMMA but maybe the Nintendo version has the colour signals inverted from the factory. Is that what the adapter is for?

The adapter is cause the nintendo cabinets use a monitor that has a audio amp in it to amp the audio. so this adapter is a audio amp

If you repopulate the missing caps that were removed for nintendo it works as normal without the adapter.
