Need advice on thumb stick controls

So I've been dabbling in building an arcade. My question is how to build a control panel with two fight sticks being used as left analog and right analog, like the thumb sticks on a controller, to run a Nintendo switch or an Xbox one? Any advice is appreciated. Type of encoder to use, buttons, sticks, etc?
 
If you want l3/r3 button on the joys, prebuilt options are somewhat limited to either flight-sticks or the few top-fire analog joys such as Ultimarc360 ("U360") with top-fire mod.

You may also be able to use the Mayflash Magic NS with some Xbox encoder, instead, not sure. I have a Mayflash adapter myself, but have only tested it with my F710 and 8bitDo controllers.

I don't have Xbox one so I don't keep up with latest info, but I think the retail options are limited for that, too, and DIY options may still require a donor controller to mod or a regular controller being attached to the encoder. The Brook Fighting XB encoder appears to support the analog.
