Madcatz made an official licensed fightstick for the US release.
I had four of them, really nice art/design once you sawp everything for real Sanwa.

But, I think I also have a set of these in a box (somewhere) from back when. Should I be worried about lag?

Convertors have lag. Some better than others.

I'd snag and X360 Madcatz TE1 stick and mod it for use with a Brook Retro which is fast. If you want to spend a little more for the Brook UFB and a tiny bit more for connectors, you can dual mod it with a Brook UFB too. An X360 MadCats TE1 is easy to mod. The PS3 Madcatz TE1 version can still be modded, but it is a little trickier. Still doable. I see Madcatz TE1 stiicks up for sale in our parts all the time.

Also, you don't have your Wii modded?
 
What makes it harder to mod? I have a boxed PS3 stick I'd consider modding with a Brook UFB.
  • More soldering to the PCB under the Turbo/Home buttons section in the upper left corner of the PCB
    • Variants to that PCB
      • The fact that information has been lost to time as Shoryuken forums doesn't exist anymore
  • The trickiness of reassembling that PCB with the plate, buttons, and switches
The X360 version clearly labeled and you can actually crimp new connectors on to make the mod easy. Here is a video that still exists for the PS3 mod. The guy's work is a little sloppy, but you get the technical info as it is there. Just pray that the PCB in your stick is the same variant as his, or you'll have to do some snooping.
 
Also, there were easy mods for it that basically replaced the Turbo/Home PCB. But Paradise Arcade has been OOS on them for a long time. And Jasen Hicks is a Muslim now, no more dope game. ---j/k, little Tupac reference for ya--- But yeah, Jasen doesn't sell stick mod stuff anymore.
 
Doing a bit more reading - some folks mentioned the nyko play cube converts worked fine with the PS1 Namco sticks without any lag. These are $10-15 used, so I will start there.

The two converters I posted both have too much (6+ frames) lag to use.
 
I was thinking of modding a wii for it to play only T vs C, @jassin000 had told me a while back that you can make the wii auto boot to a game. hook it to my console i/o in my vewlix with some retro brook boards using a game cube controller to brook wire since certain wii has game cube controller ports.

You can!
It can be IS dangerous if you don't have BootMii (full boot2 replacement) installed however.
What you are essentially doing is replacing the internal Wii Dashboard with an installed WAD file that is actually a pointer to the converted (also installed) ISO of the game.

Without BootMii you run the risk of a softbrick (that can only be fixed one of two ways, 1) original "pink fish" Wii Service disc 2) burned ISO of "pink fish" and a disc drive mod chip, NO software exploits can save you from softbrick only booting the official service disc).

I tried it with the Nyko converter and it is fine - no lag from what I can tell. I just bought it to goof around with, same way I will mess around with project justice from time to time.

All good brutha. I am going to mod up a number of sticks that I have for these uses:
  • Retro consoles using the Brook Retro
  • Consoles of the last 3 generations using the Brook UFB
  • aaaaaaaaand Supergun purposes
Also, I wanna see what this Hitbox stuff is all about, so I am going to turn one of the Mad Catz TE1 sticks into a Hitbox stick.
