In the meantime, I also made bubble memories from a Puzzle Bobble 2 cart. I wrote the 4 EPROMs, modifying them to immediately enable the extra mode (Thanks Pythagoras), and combining both the original version and the Black Edition version (Thanks rtw) which can be selected via a switch.

I finally got it. Although I'm still not sure how to locate the ROMs on the board... Without the Bubble Symphony PCB image, I'd probably still be stuck. Here are some photos of the PCB and the EPROM labels.

OK, I found the image of the Bubble Symphony PCB here on the forum. It seems to be a conversion considering the EEPROMs, but at least everything is a little clearer. I don't understand why there are four EEPROMs in the audio section instead of two (d90-04 and d90-05) like in the original ROM. 🤔
