So I'm thinking in doing a Breakout/Arkanoid Cab out of a galaga cab replica that I have. Can anyone give me some pointers in witch spinner to get? I tried to source an original but I can't find any.

You need to get one with the Dial-A-Rez interface mentioned in the above link.
For the record, I haven't actually confirmed it working personally, but @BladeZX has in the following post

I bought an Arkanoid and Arkanoid 2 PCB few months ago. To be able to play them I use this spinner with the Dial-A-Rez thing.
It really works fine and I was so happy to find this alternative compare to the scalpers who are selling some arcade spinner in a pityful shape and at full price.

wow that was quick. Thank you guys! I had no idea that breakout used a potentiometer. I think I'll start with Arkanoid.
