Can someone please point me to what connector/pins one would use for stereo out?

There should be a 2-pin connector labelled CN2 to the left of the JAMMA edge. This is the right channel. The mono audio from the JAMMA edge is left channel.

Is there any way to get unamplified audio without disabling the jamma?

Just to put this to bed, headphone unamplified audio is, from what I could find, only correctly described in the p47 wiring manual.
You would use this for a seperate amp, or phono jack wiring.
You have to tap the jamma edge & the two pin connector. Pin 1 R on the connector Pin 10 L Jamma, and Pin 2 for G Jamma.
Putting this here for future reference.
