Peripherals are complex and challenging for this system, I know, but what can be done for gun games in terms of adding hardware to a CRT candy cab system? Advice for a newbie would be much appreciated

You could always go for an OpenJVS setup, it even works using a wiimote as a gun replacement.

yes; I agree; there's also Toyoshim IONA if you are looking for a low level solution.
