I swear I read somewhere that the there was an adapter to switch the joystick controls 180?

Why would you want to switch 180°? Is there a use case for going back and forth for that? Just can't think of one vs just remounting the stick the other way around.

Unless you mean 90° like nem is linking.
 
Traditionally with vertical games you rotate the monitor, not the lever.

If you do want to rotate the controls for some reason, usually the easiest way to do that is by repinning the wire harness (on a JLF) or moving around the microswitch quick disconnects (on an old style LS-32).
 
On a JLF you could probably just remove the restrictor gate and rotate the PCB.

Yeah, you can do this with the Seimitsu sticks that have the 5-pin connector PCB too. LS-32-01, LS-58-01, etc. Just take out four screws.
