I'm probably going to leave it as 2 player panels so I can get 4 players going on 2 machines.

This would be a fun set-up! Plenty of beat-em-ups, or sports titles that can use the 4 player action.

Just a chained harness.

And no issues with video output being off on the secondary cab (one without the PCB)?

No issues at all. The harness was custom made for me.
