For fine pitch work like that, you need good flux and proper tips; I prefer either a flat bevel or hoof tip (think BCF2 or BCM2 Hakko tips) but that's what I'm accustomed to, you could probably get away with a conical if the tip is small enough, it'll just be harder to clear away excess solder...

The main problem with 125C caps or higher temperature ratings is that typically affects the footprint of the capacitor, so you might not be able to fit them into areas with lots of components. 105C is generally a safe bet.
