I'm about to embark on a similar process with an Aero I recently received, so this was great motivation.
e: What model pot is that for the 5V adjust? I did something similar on my AV-5000, but yours looks way more practical.

Another option you may want to consider is RGB’s fantastic button re-mapper and auto fire PCB, the RECO.
I too had a workaround for button layouts but simplified it with RECO. RGB seems to have sold out of his latest batch but I think another is planned.
Just for anyone reading this in the future, unfortunately not. The "standard" Radio Shack style panel mount pots don't clear the heatsink. I had to drill a 7mm hole a couple cm to the right in order to have it fit:It's a standard pot 1Kohm
The pot you're using seems to be a Vishay P11S1V0FLSY00102KA, which is $15.30 a pop
