Yes, they will work perfectly fine, they are arcade stick games nonetheless, not sure about the layout tho, but this also means you can use your own PS1/2 Sticks, so long the layout is like

There is still a pretty active community for the older Gundam games (Particularly Rengou vs ZAFT II), because Japanese guys found a way to "Hamachi'd" the ethernet jack, and they can essentially play online with their PCBI will give it a try with the Gundam games once I get the chance. So sad the PS2 port didn't had any offline LAN options at all, but hey, there is at least a work around.
