I used to have my gaming PC hooked up to my Chewlix outside, it was clunky in many ways and not very elegant as an "arcade" cab. The new SteamOS powering the Steam Deck is a fantastic replacement and give you that joystick operated "kiosk".
I showcased this on my stream yesterday and cut out the first part and put on YouTube.
I don't know if I can claim I coined the SteamLix term, but it's a fun combo.

Oh, I did forgot to mention at the beginning the BT keyboard/trackpad I have outside the cab for emergency typing and navigating. I show that towards the end of the full stream:
