Original cables are hard to find, but making your own is straightforward,no need to buy.
For the VOT twinstick, It has two sets of inputs (Up, Down, Left, Right, B1, B2).
Each set corresponds to the Player 1 and Player 2, either JAMMA or JVS I/O.
Start button is wired to the Player 1 connector.

Thank you. Do you know where I can purchase the materials to make the harness?

Also, which outgoing wire is for the top button and which is for the trigger? I’m guessing the black is ground.

The black wire is likely GND . You can use a multimeter in continuity mode to trace each wire back to its corresponding button.
The connectors are typically JST or Molex, you can check their product catalogs for pinouts. However, if it's for personal use, you can simply cut and solder the wires directly without worrying about the connector type.
