As far as my process:
A custom bit of code that checks opcodes and patches memory addresses for RAM regions (to move the main RAM's location, for example).
Disassemble the 68K and rewrite & patch in functions as necessary.
Sprite and fix files are converted directly into NeoGeo format.
Music and sounds are the same as the way you do it -- recording and using soundbuilder .
